But, apart from slicing or biting directly into the legendary pear, we’ve searched for a more exciting yet deliciously easy way to enjoy the mighty pear.

Especially as how a recent study* revealed that over 81 per cent of Australians have experience poor gut health issues in the last six months. INGREDIENTS

½ cup coconut flour
½ cup gluten free plain flour
1 cup almond meal
½ cup coconut sugar
1 tsp baking powder
½ tsp bi carb soda
¼ vegetable oil
1/3 cup almond milk
1/3 cup sparkling apple juice
2 eggs
2 tbsp maple syrup, plus 1 extra to serve
1 medium Pear, finely diced

METHOD

1. Preheat an oven to 180°C and grease a 12-hole muffin tin.

2. Meanwhile, in a medium bowl, combine the flours, almond meal, coconut sugar, baking powder and bi carb soda. Set aside.

3. Then, in a medium sized jug, whisk together the eggs and all of the remaining ingredients except the pear.

4. Pour the egg mixture into the flour mix and stir to combine. Stir through the pear and divide evenly between prepared muffin tins.

5. Bake for 30 minutes, cover with foil at 20 mins if browning too quickly.

6. Once cooked, brush with reserved maple syrup while the muffins are still warm. Enjoy!

Tip: To evenly distribute the mixture within the muffin tin, use a squeezable, circle-shaped ice cream scoop to ensure that each insert receives the same amount of muffin mixture.
