There’s a fresh, new, coffee-kid on the block, and they are making a splash in Darlinghurst. The new Wilde & Co eatery has opened its doors at the old Edition Coffee Roasters site, with a mission to serve nutritious all-day brekky dishes using locally sourced produce.
With crisp white walls, bursts of green ferns and organic timber tables and bench tops, Wilde & Co offers a nook for customers to escape the jam-packed streets and relax in a foodie oasis.
Food aside, if you’re a coffee-craving customer you will not be disappointed. Wilde & Co is the only cafe in Sydney to use Allpress organic beans which features throughout the 12-strong coffee menu. If coffee isn’t your first pick, the extensive list of beverage delicacies will be sure to tickle your fancy with a selection of raw organic smoothies, Bodhi organic teas, ade, cold pressed juices, milkshakes and iced beverages. Our pick of the lot, the Prana sticky leaf chai with our choice of almond milk – served frothy and creamy in the self-pour pot, is the perfect way to start a wintry morning.
But let’s not deviate from the sensational array of dishes on offer. The fresh and nourishing menu has been created by the former hatted chef Tomislav Martinovic (ex. Heston Bluementhal) and focuses not only on innovative and vibrant dishes, but also promotes sustainable eating. The team behind Wilde & Co (including owner, May Choi) wanted to ensure the cafe uses local, seasonal produce to create unique flavours, and create in-house condiments and ferments including their almond butter, cashew nut cream and pickled veggies.
And they’ve done just that. Fabulous dishes jam-packed with flavour, without any of the nasties. Better yet, there is something for everyone. The organic cafe accommodates for those who are vegan, vegetarian, dairy free or want their fix of prosciutto.
So, what to order? We’ll try to narrow it down for you.
There were three major contenders for the ultimate brekky dish; the avocado on toast (there really is an art to it), the vegan coconut stack and the green pea fritters. All stand-outs in their own right.
The avocado, dressed in lemon and togarashi sesame seasoning, sat on two slices of deliciously dense Nonies’s charcoal quinoa bread and was dotted with house-pickled radish. The neon colour palate of lime green and fuchsia pink against the canvas of black bread made for a delectable artwork that shone with vibrancy and taste.
The next was a surprising burst of flavour and texture; the vegan coconut stack. As everyday omnivores ourselves, we were intrigued as to what the ‘banana-bread-like’ stack would be. We were delightfully stunned to eat each velvety, moist and coconut-ty warm bite. The perfect bake! Topped with creamy organic coyo coconut yoghurt, fresh berries, grapes, orange and drizzled in a sweet organic honey, the dish provided the ultimate light start to the day. The slight sourness of the yoghurt paired perfectly with the sweetness of the fruit and honey. A must-try dish.
The final contender, that we seriously encourage you to order, are the green pea fritters. Ask yourself, do you like ricotta? Do you like peas? Do you like shallow fried morsels of utter deliciousness? Then these are for you. Better yet, if you’re feeling a little full, you can order these on the small size as a side. The fritters arrive in mini-football form, are lightly crumbed and fried, stuffed with creamy and soft ricotta and pea batter, infused with herbed coconut yoghurt and sit on a bed of pickled beetroots, purple kale salad and are sprinkled with pistachios. You can’t go wrong.
If it’s a cold winter’s day, and you’re in the mood for something light, yet warm and flavourful, we recommend the warm quinoa porridge, topped with golden pears, cinnamon, saffron syrup and is cooked with coconut milk. Fair warning, if you aren’t a quinoa fan, stay away. This is for the flake-loving folk like us.
