Merivale and Pimm’s are transforming Coogee Rooftop’s Glasshouse into a stunning London-style oyster bar. Pimm’s Oyster House will offer classic serves of the beloved gin-based aperitif, bespoke cocktails and freshly shucked oysters every weekend throughout March until 3 April.

Inspired by the grand oyster bars of London, the rooftop pop-up will serve shucked-to-order Sydney rock oysters that can be enjoyed au natural or partnered with the Pimm’s mignonette – specially created by Coogee Pavilion’s Executive Chef Jordan Toft to enhance the flavour of the oyster by fusing the fruitiness of Pimm’s with the acidity and bite of vinegar. Oysters are $21 for a half dozen or $42 for a dozen.

Kicking back on the rooftop, Sydney-siders can wash their oysters down with the refreshing taste of Pimm’s, available in cups ($10) and jugs ($30). Mixologist Gordon Purnell has also created four bespoke Pimm’s cocktails available exclusively at the oyster bar:

  • Oyster House Club’ – Pimm’s, Tanqueray, Antica Formula, Absinthe and lemon zest
  • ‘Pimm’s Pony’ – Pimm’s, lemon, orange bitters, pale ale
  • ‘Acapulco’ – Pimm’s, passionfruit, orange, vanilla, bitters and tarragon
  • ‘West End Sling’ – Pimm’s, Grand Marnier, Tanqueray, pineapple, grenadine and sparkling wine

Pimm’s Oyster House pays tribute to the rich history of the aperitif, with vintage Pimm’s posters and photographs of the English landscape lining the walls. Antique mirror table tops, marble finishes and a mosaic tiled floor bring to life the historic oyster houses of London in Coogee’s coastal setting, harking back to where it all began for Pimm’s. The fruit cup was created in the 1840s when James Pimm, an exalted landlord of a well-regarded oyster house in London’s financial district, ­invented and marketed the drink as a health tonic. The mixture became so popular over the next decade that Pimm began selling his top-secret concoction commercially and then globally as the fingers of the British Empire reached into India, Canada, Caribbean and Australia.

Pimm’s Oyster House is open 12pm-10pm, Friday to Sunday until 3 April, with special Pimm’s offers available across Coogee Rooftop all week.
