Led by 2016 Electrolux Young Restaurateur of the Year, Cameron Cansdell, is fish dining – Point Frederick’s answer to elegant and modern seafood while upholding sustainability.
fish dining‘s menu is inspired by the Central Coast’s sub-tropical climate, playing on memorable flavour combinations that are inspired by nostalgic travel and zests from around the world. It has been designed to showcase the sustainable seafood selections as the star ingredients, with Cameron working closely with his hand-picked selection of fishmongers all certified by the Marine Stewardship Council.
fish dining offers a three-course a la carte menu for more formal occasions, or a variety of smaller bite-size menu items for a quick meal or shared tapas-style dining. A few of the highlight dishes include their fish curry of coconut, fresh turmeric, kaffir & lotus root, or even their king prawn cocktail with Yarra Valley salmon roe. Indulge in their delectable clams with apple cider, potato, crème fraiche & samphire, or their zesty fried Snapper wings with Cajun spice and mayonnaise. Two of their last highlights are the naturally sweet Moreton Bay bug tail with mango, macadamia, holy basil & nam jim and their grilled live Western Australian marron served with Moroccan chermoula, OR lemon, parsley, garlic, butter.
Cameron opened fish dining with his wife Hayley Cansdell, and has worked in some of NSW and Victoria’s finest dining establishments including Bel Mondo, Bistro Moncur and De Bortoli winery restaurant in the Yarra Valley. He also worked at the 5-star Bells at Killcare boutique hotel as Head Chef under Stefano Manfredi where he met Hayley who was the restaurant’s Front of House.
In 2014, Cameron and Hayley left Bells to open the Central Coast’s chic bombini dining venue, a dining destination set on two acres of landscaped grounds incorporating the main-house Italian restaurant. Two years later they opened bombini pizza, a more casual alfresco space specialising in wood-fired pizzas and other wood-fired delicacies.
fish dining is open from 12 noon until late from Tuesday to Saturday.
