Possibly impossible to fail.

Partnering with Chef and Electrolux Ambassador, Richard Ousby, we’ve been let in on a little secret on how to make the impossible, possible. This is a recipe for the skilled, the starters and those who love using no more than two appliances to create a delicious dessert. We’re talking about the Impossible Citrus Pie – so easy that it’s possibly impossible to fail.

The Impossible Citrus Pie is one of Richard’s family favourite desserts. Apart from being exceptionally delicious, the pie unites some of the most commonly wasted foods found in Australian homes. Today, according to the Australian Bureau of Statistics 2010-2011 Waste Account, in 2010-2011 organic waste (food, garden and lawn clippings) is the largest type of waste produced in Australian homes. This waste led to its disposal in landfill which is a staggering 6.4 million tonnes per year.

So whether you’re learning how to be more sustainable in the kitchen or you’re simply wanting a dessert that takes no more than 35 minutes to prepare and cook, this is the recipe for you!

INGREDIENTS

½ cup butter, melted
1 cup sugar
4 large eggs
100g almonds, slivered
1 cup milk
Rind of 1 lemon, grated
Rind of 1 orange, grated
½ cup of lemon juice
½ cup of orange juice
½ cup plain flour, sifted
1 cup of desiccated coconut
½ cup icing sugar
Fresh cream to serve


METHOD

1. Place all ingredients in a food processor and process for 1 minute.

2. Place the mixture in a greased pie tin and place it in an Electrolux Multifunction Pyrolytic Oven on the Bake + Steam function setting and cook for 30 minutes.

3. Remove and dust with icing sugar.

4. Serve with fresh cream.


TIPS

  • By using the Bake + Steam function found on an Electrolux Multifunction Pyrolytic Steam Oven for the Impossible Citrus Pie, you’ll be adding moisture in the dessert. You can use a regular convection oven, although by adding steam it will take your desserts to restaurant quality level, delivering a delicious flavour and perfect texture every time.
  • If your pie isn’t turning a golden brown, turn your oven to the grill function and leave until it’s perfectly toasted on top. Make sure you keep your eye on the pie to make sure it doesn’t burn.
