Melbourne’s Fancy Hank’s is having a Singaporean pop-up

This two-night only pop-up in July coined ‘Majestic Hawker’ will celebrate all the street food favourites from Singapore and Malaysia.

The team behind Melbourne’s legendary American-style barbecue joint, Fancy Hank’s, is taking over an Abbotsford warehouse to serve up a Singaporean and Malaysian hawker-style barbecue menu.

At Hank’s Majestic Hawker pop-up the usual suspects will be swapped out for soy marinated chicken wings with chilli vinegar, sambal stingray served in banana leaf and pork belly satay skewers with homemade sauce. There will also be a range of wok-fried dishes including rice noodles with Chinese sausage, fishcake and egg as well as oyster omelettes and fresh market greens.

For dessert, you can expect a full range of traditions Asian delicacies including fried banana fritters with pandan coconut ice-cream and a sago pudding with coconut milk and palm sugar syrup.

Fancy Hank’s Kent Bell says “Singapore has been a favourite destination for Mike [Fancy Hank’s Executive Chef] and I to visit over the last couple of years and we have been really inspired by their barbecue cooking techniques.”

Taking the reigns of the charcoal-fired wok will be Chef Alicia Cheong, who previously headed Fancy Hank’s kitchen when they were housed at their former home, The Mercat Cross Hotel. Alicia will return to Melbourne after working at Michelin Star Restaurant Par Andre in Singapore. The team first discussed the idea of branching into hawker-style barbecue on their trip to visit Alicia in Singapore a few years back and the project has been in progress ever since.
