The season calls for it – summer salads are back!

Need to whip up a seasonal salad for the next festivity? Then this may be the recipe just for you. Perfect for your next camping trip, family barbeque or summer feast, the Cabbage and Pawpaw Salad is extremely easy to toss together and combines a refreshing taste of seasonal fruit layered with a punchy dressing and fresh, shredded green cabbage – great for pairing with more heartier summer favourites including Sarah’s Whiskey Grilled Chicken Wings.

Usually, we don’t make friends with salad, but in this instance, this is a scrumptious exception.

INGREDIENTS

FOR THE SALAD

1/4 green cabbage, shredded
1/4 pawpaw, cut into bite-sized pieces
1 avocado, sliced
Handful of flat-leaf parsley, chopped
1 green chilli, seeded and sliced

FOR THE DRESSING

Juice of 1 lime
2 tbsp verjuice
1 clove garlic, finely chopped
1/2 cup finely chopped flat-leaf parsley
1/2 cup finely chopped coriander
Extra virgin olive oil
Salt

METHOD

1. To make the salad, prep your ingredients. Toss together the cabbage, pawpaw, avocado, parsley and chilli in a bowl, then arrange in a bowl.

2. To make the dressing, put the lime juice, verjuice, garlic, parsley, coriander and a drizzle of extra virgin olive oil in a mortar and pound with a pestle until well combined. Season to taste with salt.

3. Dress the salad and arrange Whiskey Grilled Chickens Wings on top. Drizzle the whiskey sauce over the chicken and enjoy!
