Breakfast or dessert, we can all agree that pancakes are, in fact, the best way to start and end the day.

With Pancake Day 2020 (Tuesday 25 February) flipping up fast, we’ve partnered with Australian owned and grown spread-masterminds, Mayver’s, to provide a delicious (and surprisingly healthy) easy pancake recipe: Chocolate Pancakes with Caramel and Peanut Butter Sauce – perfect for Shrove Tuesday and beyond.

Made with almond milk, dates and a ripe banana, this Pancake Day you’ll be serving up a fulfilling breakfast or late-night treat in under 20 minutes. Tip: double the recipe so there’s more for you to stack up on.

INGREDIENTS

FOR THE PANCAKES

1 cup wholemeal spelt flour
1 cup unsweetened almond milk
3 medjool dates, pitted
3 tbsp raw cacao powder
1 overripe banana

FOR THE SAUCE

1/3 cup coconut milk
2 tbsp Mayver’s Smooth Peanut Butter
3 medjool dates

METHOD

1. Starting with the pancakes, blend the dates and almond milk until they are well combined (no chunks).

2. In a mixing bowl, combine the flour with the cacao powder, date/almond milk from the blender and the banana. Mash the banana through the mixture with a fork.

3. In a non-stick frying pan over medium heat, cook the pancakes for approximately 2 minutes on either side. Remove, set aside and pre-plate.

4. For the sauce, blend the ingredients until smooth and creamy. Pour over pancakes when they’re ready.
