Sydney, warm up your winter!

There’s no doubt that Sydney has an extensive list of bars and restaurants that serve up delicious cocktail concoctions. Venturing around the city, we’ve found six bars with a new range of cocktails perfect for the season! So whether you’re into something more experimental, cocktails with a traditional twist or a simple mulled wine – we have compiled the best (and most delicious) ones for you.

Bar M

This winter, the Rushcutters Bay venue, Bar M (formerly known as Bar Machiavelli), has launched their very playful Power Hours Bar Menu after licensing condition changes. In hopes to promote a more vibrant Sydney nightlife economy and to raise awareness for the decision that impacts restaurants and bars across Sydney, Bar M has released a range of expertly crafted cocktails. The Power Hours Bar Menu include some new favourites such as the Keep Sydney Open that’s described as a whisky sour meets an espresso martini with bourbon whiskey, porter beer reduction, barrel bitters, lemon juice and a splash of coffee; the Silent Disco with Beefeater gin, maraschino, violette liqueur, lemon juice and lavender syrup; the Footloose that’s a shakeup to the visit with Frangelico, lime and spiced rum; and finally, the Disco Ball which is a fun concoction of London no.1 Blue Gin, mango and peach liqueur with lemon, whites and curacao.

Bungalow 8

In celebration of the season, Bungalow 8 has launched their very own Winter Woodlands escape which will transport guests on a visual journey to a French Alps ski chalet. In collaboration with Grey Goose, Bungalow 8 has opened a harbourside pop-up, vintage-style cabins available to book through to the end of August. Here, guests will be able to enjoy some new cocktail concoctions including a Goose and Twisted Soda, Grey Goose Spiced Mule, a Le Grand Fixx mixed with elderflower, lime and soda; an Alpine Iced Tea, a Loosey Goosey with orange, slow gin, mint, lime and bitters; and finally, our favourite, Bungalow 8’s Grey Goose Nitro Espresso Martini. Cabins feature a Winter Woodlands food menu which is complete with pizzas, campfire bar snacks, skillet smores and more. If the only part of a ski holiday that you enjoy is the bar, Bungalow 8 has you covered.

Hacienda

Are you looking for a bar with spectacular harbour views, exceptional cocktails and delicious nibbles this winter? Look no further than Hacienda in Circular Quay. With front row seats of Sydney’s magical harbour, they have released a range of scrumptious cocktails including the Buena Onda with Midori, Ketel One Vodka, pineapple juice and kiwi syrup; Berry Delicious with Jim Beam Cherry, Disaronno, lime juice, raspberry syrup and strawberry syrup; Ponte Las Pilas topped with Beefeater Gin, Creme de Mure, Creme de Violette, vanilla syrup, cranberry juice and garnished with blackberries; or the Jam Jar which is just as sweet and delicious as the real thing with bourbon, Chambord, Creme de Mure, Sweet Vermouth, whiskey bitters, strawberry jam and finally served with sweet tart, macadamia and praline; or finally the very popular Lemon Cheesecake with Ketel One Vodka, Frangelico, Licor 43, limoncello, lemon Juice and caramel syrup. If you’re a regular, you’ll be pleased to know that Monks Secret to Happiness and Campfire Espresso Martini has also returned to the menu. Visiting with a group? The Rook

The Rook is an institution that can be found in Sydney’s CBD, and is renowned for its innovative cocktail list and spectacular skyline views. To celebrate the colder months, The Rook has released Hot Gin Roof cocktails  served in vintage styled crockery including Berrylicious, Tea Time, Hot Ginsmith and Cuppa Joe. On top of that, there’s a new range of more traditional cocktails that feature edible florals including Ginger Apple Fizz with Sipsmith London Cup, Sipsmith London Dry, Sipsmith Sloe, ginger syrup, lime, apple, cinnamon, dirty tonic, whites and nutmeg; Spiced Plum with Sipsmith Gin, Sipsmith Sloe Gin, white cacao liqueur, plum, puree, lemon, spiced syrup and plum bitters; Cold Buttered Gin featuring Brown Butter Washed Sipsmith Gin, winter spice syrup, black walnut bitters and garnished with citrus peel; and finally, Mulled Pumpkin Spiced Negroni with Sipsmith Gin, Pumpkin Spice Campari and then topped with mulled wine and hibiscus Tea.

Tucked away in The Rocks in Sydney, you may or may not already know that Tayim is one of our top picks this winter for middle-eastern inspired cocktails. And boy, they do not disappoint. Using traditional techniques and ingredients, the team behind Tayim have created a range of delectable cocktail concoctions with a re-imagined twist. Featured on the new winter cocktail menu is Tayim Spritz, Big Trouble in Little Arak, Little Ramos, Bedouin Espresso Martini, Limona’na, Silk Road, Desert Oasis, Mango Tango, G&T, and finally, our favourite, the Baklava Martini which is the perfect concoction of vodka, Frangelico, Amaretto, pistachio, rose hip tea and vanilla that tastes like the real thing! Regulars, don’t fret, Tayim has also fortunately kept their much-loved Wildflower which consists of gin, elderflower, house chai, citrus and pomegranate shaken up to create a very sweet and delicious sour drink. Whether you’re looking for delicious drinks, scrumptious eats or just an intimate venue that’s located in one of Sydney’s most renowned areas rich in history and culture, Tayim is the place to be.

This quirky, urban, garden oasis is the perfect hideaway regardless of what time of the day or week it is. Offering daily food specials and an impressive drinks menu on top of their impressive 13 page wine list; if you’re a lover of wine, this is where you need to be this winter. For your visit, why not try The Winery’s Roast Garlic Polenta Fries, Slow Cooked Lamb Shoulder, Paris Mash and Brocoolini to share and finally, their Tiramisu Baked Alaska and one of their Cannoli’s of the week.
